We&#8217;d gone to the <a href=\"http:\/\/www.hersheygifts.com\/SpecialtyShops\/MaunaLoa.aspx?sc=ML1823&#038;HG_ID=HG_Vanity:000119\">Mauna Loa<\/a> factory in Hilo and picked up a bag of crushed mac nuts. Seemed like a good thing to make a chicken crust out of. Here is what I came up with.<\/p>\n<p><a onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\" href=\"http:\/\/3.bp.blogspot.com\/_3TPwsqp9Ro8\/SV6WCh1YAlI\/AAAAAAAAAFw\/ggmi0u6A46k\/s1600-h\/mac_chicken.jpg\"><img decoding=\"async\" style=\"cursor:pointer; cursor:hand;width: 320px; height: 316px;\" src=\"http:\/\/3.bp.blogspot.com\/_3TPwsqp9Ro8\/SV6WCh1YAlI\/AAAAAAAAAFw\/ggmi0u6A46k\/s320\/mac_chicken.jpg\" border=\"0\" alt=\"\"id=\"BLOGGER_PHOTO_ID_5286827982765687378\" \/><\/a><\/p>\n<p>4 chicken breasts<br \/>1\/2 cup Panko (or plain breadcrumbs)<br \/>1\/8 cup crushed macadamia nuts<br \/>1\/8 cup shredded coconut<br \/>salt and pepper<br \/>1 egg plus 2 Tbsp milk, whisked well in a medium bowl<br \/>Macadamia nut oil<\/p>\n<p>Salad:<br \/>Ripe Mango, peeled and cut into large slices<br \/>green lettuce, cleaned and torn into bite-sized pieces<br \/>1\/8 cup rice vinegar<br \/>1\/8 cup macadamia nut oil<br \/>1 small shallot, minced<br \/>about 1\/8 to 1\/4 cup of very ripe papaya mashed. If you don&#8217;t have papaya, you can use any mild fruit juice like apricot, pear, or mango instead.<\/p>\n<p>Heat a large skillet over medium heat with macadamia nut oil enough to coat the bottom of the pan. Combine the mac nut, panko, coconut, salt and pepper on a large dinner plate or wide bowl and toss well to combine. Dip each chicken breast in the egg wash, shake off excess and dip in the panko mixture, coating well. Place breasts in pan and cook on medium-low until golden brown on both sides and the liquid runs clear when cut into with a knife.<\/p>\n<p>Salad:<br \/>In a large salad bowl, combine oil, vinegar, juice, salt, pepper, and shallots. Toss lettuce and mango slices to coat. Serve topped with shredded coconut and mac nut pieces.
