{"id":5691,"date":"2012-10-07T08:23:39","date_gmt":"2012-10-07T15:23:39","guid":{"rendered":"http:\/\/alannarisse.com\/blog\/?p=5691"},"modified":"2016-12-28T12:37:41","modified_gmt":"2016-12-28T19:37:41","slug":"stuffed-dumpling-squash-and-coleslaw","status":"publish","type":"post","link":"https:\/\/www.alannarisse.com\/blog\/stuffed-dumpling-squash-and-coleslaw\/","title":{"rendered":"Stuffed dumpling squash and coleslaw"},"content":{"rendered":"<p><a href=\"http:\/\/alannarisse.com\/blog\/wp-content\/uploads\/20121007-080737.jpg\"><img decoding=\"async\" src=\"http:\/\/alannarisse.com\/blog\/wp-content\/uploads\/20121007-080737.jpg\" alt=\"20121007-080737.jpg\" class=\"alignnone size-full\" \/><\/a><\/p>\n<p><strong>Forbidden rice stuffed dumpling squash<\/strong><\/p>\n<p>Stuffing for about 4 dumpling squashes<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n1 cup forbidden (black) rice<br \/>\n2 small sweet peppers on 1 red bell pepper, chopped<br \/>\n8 shiitake mushrooms, chopped<br \/>\n10 cherry tomatoes<br \/>\n1 green onion, chopped<br \/>\n2 slices cooked bacon<br \/>\n3 cloves garlic, minced<br \/>\nOlive oil<br \/>\nSalt and pepper<\/p>\n<p>Cut the tops off dumpling squashes jack-o-lantern style and scoop out the seeds. Add a half tablespoon of butter to the bottom of each squash. Put tops back on. Place in a Pyrex dish with a half inch of water and bake at 350 for 30 minutes.<\/p>\n<p>Cook forbidden rice in a rice cooker or stove, I used the semibrown setting in mine. Saut\u00e9 veggies in olive oil until tender. In a large bowl combine rice, bacon, veggies and a tablespoon of butter and toss until combined.<\/p>\n<p>Remove squash from oven, stuff with rice and place tops back on. Return to oven for 25 more minutes.<\/p>\n<p>You can do the stuffing mixture and pre baking of squash ahead of time.<\/p>\n<p><strong>Apple ginger coleslaw<\/strong><\/p>\n<p><strong>Ingredients<\/strong><br \/>\nHalf red cabbage, sliced very thin and in 2&#8243; long pieces<br \/>\nHalf apple, cored and sliced very thin<br \/>\nHalf medium sized onion, sliced thin<br \/>\nAbout 1 tablespoon fresh ginger, minced<br \/>\n1 tablespoon apple cider vinegar<br \/>\n4 tablespoons olive oil or grapeseed oil<br \/>\nSalt and pepper (fresh ground white pepper preferred)<br \/>\n1<br \/>\nTeaspoon sugar or honey<\/p>\n<p>In a small bowl, whisk together oil, vinegar, ginger, sugar, salt and pepper. In a large bowl toss together cabbage, apple, onion, and dressing.
