We’re swimming in vegetables right now. It’s just that time of year in Portland. It’s a see of abundance, as long as you love beets, kale, chard, and zucchini… Lots and lots of zucchini.<\/p>\n

And so I’ve decided to start a food cart called “Special Beet Service” and will specialize in veggies, especially beets. All of my dishes will be named after songs, bands, or albums.
