I created a new San Francisco sourdough starter two weeks ago. The first batch I tried, wasn’t wokring out. This one seemed much more successful by day three. Last week’s bread was close but still not spongy enough. The dough didn’t seem to want to rise and it was still very moist. I had to add much more flour than I should have. This week is a whole new story. The starter is very foamy and active. It rises and falls like the moon and has a fantastic smell. I shaped the dough into rounds this morning and will bake them around noon. I’m excited to try out the new batch. Just a little more time and fresh air has make a huge difference in this batch. I wonder what next week’s dough will be like. I am loving having this starter. It’s like a pet that gives you presents every week.
