Many of my “recipes” come from scrounging up whatever I have on hand. This is exactly how I came up with this dish. I’d just gone to Rainbow grocery where I tried to buy a random assortment of vegetables I don’t eat enough of, either because I haven’t figured out what to do with them, or I forget about them. Last night I picked up a beautiful bunch of baby Dino Kale. We had a little bit of spicy sausage in the freezer and we always have plenty of cans of tomatoes handy. Mild sausage would work great too. Kale is sweet and mild in flavor and goes well with just about any meat or vegetable. This would also be good with butternut squash cubes and pecans in a broth, olive oil base. Mmmm, might have to try that next time.
Ingredients
1/2 package of pasta such as radiatori or something similar like fusili.
About 1 cup of spicy sausage (either buy it out of the case, or remove it from the case)
1 small yellow onion, diced
2 cloves garlic, minced
1 can diced tomatoes
1/4 cup stock
1 bunch Dino Kale, thick parts of stems removed and chopped roughly
olive oil
salt and pepper
Bring a large pot of water to a boil. Add a generous pinch of salt and cook pasta, until al dente. While the pasta is cooking, in a large sauce pan, saute the onions in some olive oil until tender. Add garlic, tomatoes, and stock. Steam the kale in a steamer pot for 10-15 minutes until the remaining stems are just beginning to get tender. Drain pasta, return to the pot and combine with sauce and kale. Drizzle a little olive oil over the top and season with salt and pepper to taste. Top with freshly grated Parmesan cheese.
