Well, my aspic turned out pretty good. It looks pretty good as one piece, and it tastes good, but when you slice it, it leaves something to be desired. Just needs a little more color. The yellow beets overwhelmed the delicate greens in the fennel. Maybe I just need some bell pepper in there, or maybe some peas and roma tomatoes. Zest of lime maybe?
This aspic has beets, fennel, rhubarb, and orange zest, with a cucumber outter covering.
It was very fun concocting this recipe. I wonder what I’ll try next time. Maybe something with golden raisins.
Today I’m off to the studio for the afternoon, then a meeting about Open Studios. Tomorrow I have a class at the Center for the book. It’s an encaustic monoprinting class that I’ve been very much looking forward to.
