guac whack a mole

It’s summertime so go make yourself some guac.

Ingredients:
2 very ripe avocados (save one pit)
2 limes, juiced
Handful of cilantro, diced
Half an onion, diced
1 fresh, ripe tomato, diced
Salt and pepper

Slice avocados in half lengthwise by rotating your knife around the pit. Remove pits from avocados and make a series of slices lengthwise down the flesh of the avocado. Scoop out the guts and place them into a medium-sized bowl. Add lime juice, onion, salt, pepper, and salsa. Mash together with a fork. Stir in the cilantro. Serve with crispy chips and a margarita.

To store your guac for future use, put one of the pits back into the bowl and refrigerate, covered in plastic wrap. That’ll keep it fresh and green for a couple days. Without the pit it’ll turn black pretty quick.
