Nummy Oat Bran Cookies

DSCN4821.JPGThese oatey, search chewy delights are a relatively guiltless sweet treat. They make a mean ice cream sandwich. I concocted this recipe while looking for new ways of incorporating more oat bran into my life. Read about the health benefits of oat bran.

Ingredients:
1 stick unsalted butter (at room temperature)
1/2 cup sugar
1/4 cup brown sugar
1 Teaspoon vanilla
1 egg
2 Tbsp molasses
1 cup all purpose flour
1/2 cup whole wheat flour
1 cup rolled oats
3/4 cup oat bran

1teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon allspice
1/4 teaspoon fresh or powdered ginger
3/4 cups raisins or currants
3/4 cup walnuts finely chopped
1/4 cup dried coconut
3 Tbsp flax seeds (crushed in a mortar and pestle)

Preheat oven to 325°. In a large mixing bowl, illness mix sugars and butter together until smooth. Agg vanilla, egg, and molasses and mix until well combined. In a separate bowl, combine oats, oat bran, flours, baking soda, baking powder, and spices. Combine with a fork. Pour dry ingredients into wet, 1/3 at a time until combined. Add fruits and nuts and combine. Line a cookie sheet with parchment paper. Roll Tablespoon sized balls of dough in your hands and flatten into a round cookie, approximately 2″ in diameter. Place cookies close together on the cookie sheet and bake for 15 minutes. The bottoms should be lightly brown but the tops may not have much color, this is fine, these cookies are better a little under done. Cool on a cooling rack. Store in a Tupperware container in the fridge until you are ready to gobble them up. Makes about 40 cookies.
